When pondering the potato aisle, pick sweet potatoes. These delicious, bright orange-fleshed beauties are in season in October and November in Georgia and South Carolina, and they’re one of nature’s best sources of beta carotene. Sweet potatoes are also a good source of antioxidants and vitamin C.
Did you know that those canned “yams” found in the supermarket are actually sweet potatoes? Although they’re often confused, sweet potatoes and yams are completely unrelated botanically.
To optimize their nutritional benefits, steaming is the recommended cooking method and some reports say that adding three to five grams of fat to your serving of sweet potatoes will help with beta carotene absorption.
